OK, I was saying that what was mentioned at the market (two sections; cooked and un-cooked Sushi) wasn't really Sushi after all, as most people have experienced Japanese food as

A) Cooked &

B) Sushi

There are exceptions to the rule and the term 'sushi' covers a wide area these day I'll admit, but the reference to the book/film Princess Bride, w/ Inigo Montoya's famous meme (paraphrasing here- Your use of the word/term xxx doesn't mean what you think it does...), that was me being sarcastic and a bit of a foodie-snob.

It's easy for me to fall in to the snobbery partly because, while I don't like to pay a lot just to say it's the best or impress someone, I do, very much, appreciate fresh, local, high quality ingredients. (And then again I eat 7-11 burrito bombs from time to time too...)

I also don't always take into account the proximity I have to San Francisco proper, the West Coast in general, and the Pacific Ocean specifically, as a fresh food resource. (Even when shipped in, the expectation is that Fish are swimming riiiiiiight over there, it better be fresh...)
Some folks (esp those selling the stuff) in other places don't have that 'over-the-shoulder-being-looked-at' checks and balances we have where I am.

Add to that idea the great amount of both naturalized and vagabond folks from 'foreign lands' here, who wont put up with monkey-business (of which you have to pay extra for) and I can get my boxers in a twist over "thats the cooked sushi section over there...".
