Well, obviously we've heard from characters who talk about learning to look more Human, and fitting in in general society- but I'm thinking Castela has a 'natural' bipedal shape she falls into, even though she can morph into a tangle of vines from time to time, depending on the situation (Attack Mode, Falling Down the Stair, etc...).
As she grows we'll see her settle into a different, grown, shape.
Just now she's going through Puberty's Onset. s'OK.
