Longma, qilin (also spelled qirin or ki-rin), fenghuang, xiao, nine-tailed fox (forgot the name), winged lion (ditto), one of the various water horses (all of whose names I've forgotten), etc.
EDIT Okay, so the dog with a human face is from Japanese mythology. Not sure what i was thinking of in Chinese mythology (possibly a manticore variation).
DOUBLE EDIT Missed the most obvious one. She could be the earthly manifestation of the celestial tiger; her zodiac sign. I'm not terribly sure how the overlap of Chinese astrology and mythology works, so i could have that last part quite wrong. Some how my roomate and i never really talked astrology.

I remember hearing that she was born in Malaysia, though, so she might be a Malay paranormal rather than a Chinese one. Malay folklore is sort of its own separate thing, with lots of influences from China but more from India.

According to the wikipedia entry, Michelle Yeoh is ethnic Chinese born in Malaysia.
Malaysian mythological beings . . . Orang Bunian wouldn't fit "letting loose" . . . bidadari, aka apsari wouldn't fit for the same reason . . . Harimau jadian (weretiger, werejaguar or werepanther) would . . . also possibly a nagi . . .

Yeah, i just re-read Marion G Harmon's "Wearing the Cape" series book #5 Ronin Games, and it makes the point (in fact, some plot points turn on it) that Japanese and Chinese folklore/mythology have a lot in common.
Proof Positive the world is not flat: If it were, cats would have pushed everything off the edge by now.
