Then there's the incredibly creepy Filipino vampire who looks like a beautiful woman, but at night she splits in half and her top half goes flying around killing people.

I'm familiar with this as a beautiful woman by day, and at night her head flies around with the all of the important organs dangling below it. I've even seen a pretty funny movie in Thailand where a 'witch finder' (who's accomplice would fake being one of these) would chase her off. For a fee. All is good until they encounter a real one. Hijinx ensue...

Another freaky one hails from Southeast Asia that's quite similar. The Penanggalan is a detached female head that flies around with the stomach and entrails dangling below the neck stump. Once they're done feeding, they'll soak in a barrel of vinegar so they can stuff their organs back into their body. During the day, they look like regular humans. They aren't classed as undead, either.

And for the more squimmish (and because spoilers), I'll just link the one where she reveals herself http://yafgc.net/comic/1982-penanggalan/

^ That comic took way longer to find than I thought it would.

The penanggalan is from Malaysia, BTW.

Speaking of weird vampires, there's the vampire pumpkins that go "berrel berrel" in some Eastern European country.
EDIT They're from the Balkan Peninsula. Apparently they have vampire watermelons, too.

What's weird about that? The United States has killer tomatoes...

Then there were the Macedonians, who had a cow-like critter that would run away from you whilst projecting acidic dung at you (and this attack had a range of about half a mile, too).

And when thinking about all these odd critters, consider the theory that most folklore is based (albeit often loosely or exaggeratedly) on real events. . .
