If you get rid of the peach preserves and mayo, it'd be okay. (Doesn't matter what variety, mayonnaise should never be put on anything hot.)

Swap out the mayo for curry and maybe peach preserves for mango chutney, and you've got a much better sandwich.

The sweet from the maple marinade plus curry would make for a sweet heat, especially if you used a mild yellow curry. Since it is supposed to be a Georgia special, just go ahead and keep the peach preserves...

Yanno, that doesn't actually sound bad...

Often a combination that sounds horrible when each ingredient is considered separately will actually taste good when all combined, creating a totally unexpected merging of flavours.

Other times, of course, it will be just as—or even more—vile than you'd imagine.

And then sometimes there's a real surprise. I decided to make a sweet hot sauce with plums... and discovered that plums absorb capsaicin. The sauce was sweet, but not hot at all. Except for the plums.
