Let me about something you do NOT want to do.
You do NOT want to be eating a bowl of my Mexican-inspired pork spicy rice and discover that a single - possibly almost invisibly-small - bit of minced habanero pepper has landed precisely on the tip of your tongue.

The habanero runs 100,000 to 350,000 scoville units; i minced two very finely to toss in the pot, and used shears to cut a bunch of dried chiles japones (15,000 to 35,000 scovilles) to toss in the skillet with the bacon and cubed pork.
This was an extra-big batch i'll be eating at for the next week or so - i'm looking forward with mixed trepidation and anticipation to what it'll be like after a day or so in the fridge...

A word of warning: if you're making a dish that contains fresh or dried chiles - and if it comes out about as hot as you can stand when it's just been made ... find someone else to palm off the leftovers on after they've been in the fridge for a day or so. Sitting in the refrigerator for twenty-four or so hours allows the flavors to marry and the capsacin to mature.
And the NEXT day may quite possibly be even better (or worse, depending on your tolerance)...

well, going by their own policy, I'd say the only word that SHOULD be allowed is "NONE"... try that next.
