I wish there was a way to record dreams. Like, when you play it back, everything the dreamer saw and heard is played. I mention this because I have a habit of eating cheese before bed. I developed this habit because I hear it causes weird dreams.
And I am bring this up at 3:30 AM (CST) because I just watched some creepy videos on YouTube... And just ate a slice of pizza. I'm gonna eat another slice shortly.

I do dream checks. I frequently have dreams that are so realistic, so normal and boring, and so sensible that I remember them like real events. Sometimes I'll have a conversation with someone in a dream, and the next day I'll refer to that conversation and they won't know what I'm talking about at all, because that conversation was dreamt.
So I'm trying to get into the habit of doing dream checks.
You aren't foolin' me.

The variety of the cheese may be important... the chemistry of cheeses change as they age, and fermented cheeses are different than commercial "sweet" cheeses that are made with rennet. I do recall that fermented/aged cheeses are higher in tyramine (a monoamine which acts as a neurotransmitter); people taking MAO inhibitors must avoid such foods.
You'd have to ask yourself whether the possibility of dream induction is worth the prize of eating large amounts of Gorgonzola, Stilton, and Limburger
Commonly, we dream a lot but lose the memory of it almost immediately. So, you might be having weird dreams (and dreams are usually pretty weird and non-logical) and just not holding onto the memories.
There are some decent books out there about "dream work" and "lucid dreaming". There are a few techniques that you can practice which (over time) can teach you the ability to recognize that you're dreaming, when it happens, and to come back to a waking state while holding onto the memory of your dream.
I've only had a couple of lucid dreams (that I can recall) and both occurred spontaneously, not as the result of anything I had consciously done. In one case, I woke up immediately thereafter and was able to recall the dream lucidity. In the other incident I became aware that I was dreaming... but when I woke up the next morning I remembered nothing of it. It wasn't until a few days later that, all of a sudden, out of the blue, the memory of the entire incident suddenly resurfaced (I think something happened that reminded me of something from the dream, and
blammo! the whole memory came back).

I was recently listening to an archived radio talk show (Ground Zero w/Clyde Lewis) and there was a mention of an over the counter sleep aid that is supposed to induce vivid dreaming. I'll see if'n I can't find out the name...

So, today my dad sent me a text around noon, just as I got to my first stop in Hot Springs. He had set up an interview for me at the same dealership he works at, for a position in detail. I would make $10 an hour, getting 40 hours a week.
Currently, I get $8 an hour, getting between 30 and 35 hours a week.
Also, they want me to start next week.

Sounds like a significant improvement... and maybe safer to boot since you wouldn't be putting in so many miles on the road.

That might be a reference to diphenhydramine, which is found in Unisom and many generic sleep aids. It's also known as Benadryl, and is commonly available as a generic antihistamine. Some people do report vivid or strange dreams after using it.
It can leave you a bit groggy the next day, though, and my wife says that it leaves her badly depressed for a day or so. Like any drug which affects the nervous system, it can be tricky to deal with.
It does help with pollen, though!

The problem with getting this new job is a major change happening yet again, and the hours will be from 11 to 8. Which means I won't really be able to have a life outside of work.
Also, I have a feeling that something's gonna happen that will keep me from working there very long, and I probably won't be able to keep working for the optical shop.
Why the hell can't things stay stable?
