I think it comes down to what happens to the other victims not-Brandi mentioned. If they're found and not killed as a result of not-Bud's actions, it would just be a debriefing. If her 'hunger' resulted in the deaths of many innocents, I'd wager more than a simple debriefing would be in store, even for the generally apathetic Wapsi supernatural politics.

Yes, she succumbed to her vampiric impulses, and I probably should be disappointed/horrified by her actions and how they resulted in the lack of justice for the families of the girls taken by this particular bad guy. I don't know. A serial killer who has killed a bunch of people and maybe dismembered them is eaten by a vampire, seems like poetic justice or instant karma to me. lex talionis.

Many? It would have to be many innocents? I would think one would be enough. Still, people want answers to their tragedy. While it would be satisfying to many that this scum got what he deserved, it would leave the victims families without answers they desperately need. That's why taking a serial killer alive, if possible, is for the best. We don't like seeing him or her living on with the State's dime, but getting answers from them for the relatives is worth a lot. Murdering this one has done a great disservice to those left behind and is why, normally, law enforcement goes to great lengths to keep the suspect alive. I mean...if the vampire was born a vampire (as does happen in some mythologies), then she was never human...so is eating another human cannibalism in that case? Or even if she was born human but changed into a vampire, she's no longer human, so can that be truly considered cannibalism?

To go by usage with other species, frogs which eat tadpoles (at least of their own species) get referred to as cannibals, even though there's been a huge change in the life form in between. On the other hand, chickens which eat eggs are not referred to as cannibals.
