Good point, Sarge! I wonder what the dividing line is between hard cider and apple wine? A fuzzy one - more linguistic and marketing than technical, i suspect. From what I understand, it's probably a combination of two things: the nature of the apples that you press for juice, and the fermentation (specifically, what species of microbes do it).
